Trystero Coffee at The Daily Dose

I’m a barista at The Daily Dose (not yet open to the public). We specialize in delicious seasonal food and coffee using local ingredients. Yesterday I invited Greg Thomas from Trystero Coffee to visit the store and brew a couple of his roasts using our technology.

Greg is a artisan coffee roaster in Downtown LA. He roasts one small batch at a time. We tried his Guatemala and Papua New Guinea against an Intelligentsia Rwanda. I made 12 oz. “pour overs” of all the beans using the same method (exactly how will remain a trade secret for now). Our favorite was the Trystero Guatemala.

    So, Michael Wallace. What do you do with all the coffee you make while you are practicing making it?

      put it in my mouth and spit it out. some of it i drink. some of it i don’t even put in my mouth. lots of it we give away for free!

    Thanks Mikey, I had a blast. I should have been spitting but it was all too good to just taste, I had to get the full experience. First time I’ve had a professional pour over with our coffee!
